Perhaps the most simple pleasure on earth: The chocolate chip cookie. There is no reason why those avoiding gluten and dairy should not have a cookie as soft and sweet as their allergy filled counterparts. This is a cookie that will make you forget you are allergic to anything! Enjoy!
1 cup coconut flour
3/4 cup olive oil
1 cup coconut sugar (or other natural, raw sugar)
1 tsp. gluten free vanilla
1/2 tsp. salt
1 tsp. baking soda
1 cup chocolate chips
1 tbs. coconut oil
Preheat oven to 350 degrees Fahrenheit. In a mixing bowl, combine olive oil and sugar. Add eggs and vanilla, and mix. Combine baking soda, salt, and coconut flour, then slowly add into sugar/eggs mix, mixing thoroughly. Lastly, add chocolate chips. Scoop tablespoon sized balls onto a baking sheet greased using 1 tablespoon coconut oil. Bake approximately 25 minutes.
Remove from oven, allow to cool on cooling racks.
