Easy Greek Salad & Herb Olive Oil Dressing

Hot summer days call for light and easy meals. This Greek inspired green salad has both of these qualities. The bok choy is included on the low FODMAP list of good items to eat, and the dressing is quick to throw together.

Greek Salad and Olive oil dressing

Ingredients for salad:

4 leaves of bok choy, chopped

1 medium cucumber, sliced

2 roma tomatoes, sliced

Ingredients for Dressing:

1/2 cup olive oil

1/8 tsp salt

1/8 tsp black pepper

4 basil leaves, chopped finely

lemon juice squeezed from 1/2 Lemon (or 1 tsp. lemon juice from bottle)

Greek Salad

Serves 2-4
